Direct all operations within scope of responsibility for the central kitchen to achieve its short, medium and long term business plans. To adhere to company H&S policies and maintain general cleanliness of the Kitchen. To develop the skills of the team and help develop people.


  • Apply approved functional policies, processes and procedures and monitors adherence so that work is carried out in a controlled manner.

  • Manage the effective achievement of the company objectives through the leadership of the department – setting individual objectives, recruiting qualified staff, managing performance, developing and motivating staff, provision of formal and informal feedback and appraisal – in order to maximize subordinate and departmental performance.

  • Plans menus for all food outlets served by the central kitchens.

  • Schedules and coordinates the work of cooks and other kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals.

  • Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchens at all times.

  • Establishes controls to minimize food, supply waste and theft.

  • Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.

  • Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.

  • Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met.

  • Consults with the Catering Division about food production aspects of special banquets being planned.

  • Cooks or directly supervises the cooking of items that require skillful preparation.

  • Evaluates food products to assure that quality standards are consistently attained.

  • Evaluates products to assure that quality, price and related goods are consistently met.

  • Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.

  • Provides training and professional development opportunities for all kitchen staff all around the company.

  • Drive and communicate all initiatives externally and internally to ensure on-time delivery of services as per service level agreements.
